Vintage 2017+
Chardonnay, a progeny of Pinot Noir and Gouais Blanc is responsible for the finest white Burgundy. When the vineyard site is right, yields not too high, acid not too low, and winemaking skilled, Chardonnay can produce thrilling, savoury, dry, full-bodied wines that will continue to improve in bottle for more than a decade. The ideal warm and long growing season of 2017 together with our low yield philosophy produced perfect healthy and flavourful berries with a gentle perfume, ripened to perfection from the 20 year old vines.

'I left the fruit on the skins for an extended time to extract the superb flavours. Then gently pressed and transferred the must in in 500 litre French oak puncheons (50% new) for a natural (wild yeast) fermentation until there was no sugar left. Its fine lees has been regularly stirred assisting to the wines remarkable silkiness, complexity and depth. The wine had 18 month in the barrel to mature and flourish but will develop into something heavenly with bottle age. No cold stabilization. Unfined and only lightly filtrated to retain all the goodness. Naturally beautiful…'
Tasting Notes+
Super inviting – lightly smoky with cool stoney notes. This wine offers a persistent and incredibly intense core fruit flavour of melon and papaya. So much so that the oak is lightly detectable, revealing more complexity with every sip. Rich and curvaceous across the tongue, yet still so elegant with a silky, smooth lingering finish.

From the Herzog family's organically farmed vines, this deep-gold Chard is rich and evocative, like the air after a summer rainstorm (think wet hay, fresh herbs, papaya and honeyed pear).
